Intensely sweet, vibrant and complex - simply bursting with flavour! Notes of Turkish delight, milk chocolate and Pinot Noir are most obvious, with sweet tropical fruits and florals emerging as the coffee evolves.

Grown by Rodrigo Vargas at Finca La Holanda. This coffee is picked and hand sorted at Rodrigo’s farm in San Adolfo, Huila. Later transported to Cofinet’s processing station in Garzon where is dry (naturally) fermented for 14 hours, after which the coffee cherries are floated and hand sorted for the second time and placed in parabolic dryers until reaching the ideal moisture content.
Cofinet first met Rodrigo Vargas 3 years ago when he joined the Coocentral Microlot Program (Coocentral is one of the best quality oriented coffee cooperatives in Colombia). Since Rodrigo joined this program he has been able to achieve prices around 1.5 time the commodity coffee (market) price - but it was only after Rodrigo met Cofinet that he managed to sell his first lot for 4 times the commodity price.
This lot was the first batch from his Pink Bourbon plantation. This year Rodrigo expects to double the amount of coffee he delivered in order to maximise his profits and thus be able to purchase 2 more hectares of land that his neighbour offered him last December. We expect to keep working with Rodrigo for the coming years.
Pink Bourbon is an arabica varietal that is under research in order to determine its origin - it is currently believed to be a spontaneous mutation of Bourbon that took place at 2100 metres above sea level in San Adolfo.
Monastery chose to purchase this coffee for our first ever Special Release because it truly is special! This coffee simply bursts with vibrant, interesting and unique flavours.
